Almost Rum® Ginger Cookies

Ingredients:

3/4 Cup Butter
1/2 Cup Almost Rum®
1/4 Cup Butter
1 Large Egg
2 Cups Plan Flour (Sifted)
2 tsp. Baking Soda
1/4 tsp. Ground Cloves
1 tsp. Ground Ginger
3/4 tsp. Cinnamon
Granulated Sugar (Optional)

Directions: 

Melt Butter in a pan over low heat; cool. Add Almost Rum®, sugar, and egg; beat well. Sift together, flour, soda, cloves, cinnamon, and ginger; add to first mix, Mix well and chill about one hour. Preheat over to 350. Shape dough into 1 inch balls; roll in granulated sugar (if any) and place them on greased cookie sheet.Bake 10-11 minutes. Yield 4 dozen. Make ahead plenty. These cookies freeze well, up to 4 months.

Almost Rum® Indonesian Peanut Sauce

Ingredients: 

2 tsp. Vegetable Oil
1 Cup Onion, Minced
4 Cloves Garlic, Minced
1/2 Cup Water
1/4 Cup Almost Rum®
1/4 Cup Soy Sauce
1/2 Tsp Hot Chili Sauce
1 tsp Ground Ginger
1/2 Cup Peanut Butter

Directions:

Heat oil in a non-stick pan over medium high heat. Saute onion and garlic for 3 minutes or until tender. Add next five ingredients. Simmer on low heat, for 3 minutes. Add peanut butter, simmer until smooth, stirring frequently. Optional : replace water with coconut milk for an event richer taste. Serve with white rice and chicken satay.

Almost Rum® Chicken Satay

Ingredients: 

2 tbsp. Olive Oil
2 tbsp Almost Rum®
2 tbsp Fresh Lemon Juice
Salt and Pepper
4 Boneless, Skinless Chicken Breast Cut Into 1 Inch Cubes

Directions:

Combine the first 4 ingredients. Mix well. Add the chicken cubes and marinate for at least 2 hours or overnight. Thread meat onto skewers, 4-5 pieces per skewer. Boil marinade for 3 minutes. Using real charcoal, grill chicken, turning and basting several times until completely cooked, but still tender. Tip: Soak skewers in water for 20 minutes to avoid charring. Serve with white rice and Indonesian Peanut Sauce.

Almost Rum®Pan-Seared Pork Chops with Plum Sauce

Ingredients: 

2 tbsp. Olive Oil
2 tbsp Almost Rum®
1/2 Cup Chopped Onion
3/4 Cup Chicken Broth
1/4 Cup Dried Blueberries
3 tbs Cider Vinegar
Salt and Pepper
1/8 Cup Ground Coriander
3 Plums, Pitted, Pealed, & Chopped
Cooking Spray
4 (6-oz.) Bone-in Center-Cut Pork Chops (about 1in.)
Fresh Parsley Sprigs (optional)

Directions:

Heat oil in a pan over medium heat. Add onion; cook 3 minutes. Stir in broth, berries, vinegar, Almost Rum®, salt, pepper, coriander, and plums; bring to a boil. Reduce heat, and simmer 20min.  Heat a large skillet coated with cooking spray over medium-high heat. Sprinkle salt and pepper over pork chops and add pork to skillet; cook 2 minutes on each side or until browned.

Reduce heat to medium; cook chops until done (4 minutes). Remove from skillet; cover and keep warm. Add plum mixture to skillet; bring to a simmer. Cook 2 minutes scrapping pan to loosen browned bits. Spoon the plum mixture over pork. Garnish with parsley if desired. Serve these Sauce pork chops alongside rice or couscous.
