Almost Rum®Pan-Seared Pork Chops with Plum Sauce

Ingredients: 

2 tbsp. Olive Oil
2 tbsp Almost Rum®
1/2 Cup Chopped Onion
3/4 Cup Chicken Broth
1/4 Cup Dried Blueberries
3 tbs Cider Vinegar
Salt and Pepper
1/8 Cup Ground Coriander
3 Plums, Pitted, Pealed, & Chopped
Cooking Spray
4 (6-oz.) Bone-in Center-Cut Pork Chops (about 1in.)
Fresh Parsley Sprigs (optional)

Directions:

Heat oil in a pan over medium heat. Add onion; cook 3 minutes. Stir in broth, berries, vinegar, Almost Rum®, salt, pepper, coriander, and plums; bring to a boil. Reduce heat, and simmer 20min.  Heat a large skillet coated with cooking spray over medium-high heat. Sprinkle salt and pepper over pork chops and add pork to skillet; cook 2 minutes on each side or until browned.

Reduce heat to medium; cook chops until done (4 minutes). Remove from skillet; cover and keep warm. Add plum mixture to skillet; bring to a simmer. Cook 2 minutes scrapping pan to loosen browned bits. Spoon the plum mixture over pork. Garnish with parsley if desired. Serve these Sauce pork chops alongside rice or couscous.
